I send out surveys time to time to get a "pulse" of what people struggle with. Every single time, this phrase (or something like it) always comes up...
"Not enough
time"
We sure do live in a busy world.
So these meals won't solve ALL your time issues, but it's a
good place to start. :)
These are a few "go-to" fast and easy recipes that I've shared
with my coaching clients.
Do me one favor though...
Put all the "pettiness" aside, OK?
Don't do any of this...
"Ahh man, that's dairy!
Dairy is evil!" or "Is it organic? If it's not organic, you'll shrivel up and die!", or "That has gluten and gluten is the #1 fattening food in all the land" stuff.
Moving on...
Recipe #1 - "Chicken
Parmesan"
4 oz chicken breast tenderloins (grilled or baked) - you can get pre-cut/grilled chicken in the meat section
1/2 cup tomato sauce (we use Hunt's Garlic Herb)
2 tsp of extra virgin olive oil
3 tbsp Parmesan cheese (shredded)
Drizzle the olive oil over the chicken and top with sauce and cheese. Lord help us... you'll use
the microwave for 45 seconds on this... that's right, the evil microwave.
Recipe #2 - Calorie Saving "Pizza"
100% whole wheat pita
10-15 turkey pepperoni slices
Tomato sauce (go light or heavy - your call)
Any chopped veggies you like
1/4th cup of low-fat mozzarella cheese
Spread the sauce on the pita. Top with the rest of the ingredients and bake in the oven at 350-375 for around 15-20 minutes.
Sure does cut the calories VS regular pizza. ;)
Recipe #3 - Protein Pudding
I fell in love with this years ago. It's way too easy...
1-2 scoops of chocolate protein
powder
1 tbsp of natural almond or peanut butter
Mix the above ingredients with just enough water for a "pudding-like" texture. It will take LESS
water than you think. I STRONGLY recommend adding just a few drops at a time and mix thoroughly before adding more water. Once you add too much water, it's too late.
Simply mix with 8-10oz of water and you'll feel fuller
longer, and it's only 10 calories. So whether you're a faster or not, you can enjoy this one.
